B-V CREOLE SHRIMP GUMBO RECIPE

This is a wartime recipe from Home Makers Prize Recipes, Wilson & Co., circa 1940s.

B-V CREOLE SHRIMP GUMBO

1-1/2 lbs. fresh shrimp, well-cleaned and shelled
4-1/2 cups cold water
2-1/2 to 3 teaspoons salt
2 slices bacon, diced
3 tablespoons chopped onion
1 8-oz. can of tomato juice
1 6-oz. can tomato paste
1/8 teaspoon black pepper
1 tablespoon Worcestershire sauce
1 #2 can okra
1 cup diced celery
3 tbsp. green pepper, cut into thin strips
2 tbsp. Wilson's B-V

Boil shrimp in salted water for 7 minutes.  Meanwhile, sauté bacon and onion for 10 minutes in an aluminum or enamelware kettle, if possible.  Add all remaining ingredients, the shrimp and broth.  Simmer 15 minutes.  Serve piping hot with crackers.
