B-V BEEF STROGANOFF RECIPE

This is a wartime recipe from Home Makers Prize Recipes, Wilson & Co., circa 1940s.

B-V BEEF STROGANOFF

1 lb. lean beef chuck or rump
3 tbsp. flour
1//2 tsp. salt, dash of pepper
3 medium onions, sliced
3 tbsp. fat
1/2 cup tomato juice
1-3/4 cup hot water
2 tsp. Wilson's B-V
1/2 tsp. sugar
1/2 cup sour cream

Cut meat in thin strips 2 in. long.  Roll in flour mixed with salt and pepper.  Brown meat and onions carefully in hot fat 10 to 15 min.  Add tomato juice, hot water, B-V and sugar.  Bring to a boil, then simmer over low heat 45 min.  Add sour cream, bring to boil, stirring to blend well.   Serve with plain cooked rice or in a rice ring.
