Vanilla Nut Sliced Cookies Recipe

This recipe is from an old cookbook, All About Home Baking, General Foods Corporation, 1963.

VANILLA NUT SLICED COOKIES

Crisp, buttery cookies that can be sliced and baked as you need them.

2 cups sifted flour
1-1/2 teaspoons Calumet Baking Powder
1/8 teaspoon salt
6 tablespoons shortening
1 cup granulated sugar
1/4 cup firmly packed brown sugar
1 egg, well beaten
1 cup chopped nuts
1 tablespoon milk
1-1/2 teaspoons vanilla

Sift flour, baking powder, and salt together.  Cream shortening; add sugars gradually, creaming thoroughly.  Add egg, nuts, milk, and vanilla; mix well.  Add flour gradually, mixing well after each addition.  Shape into rolls, 1-1/2 inches in diameter, and wrap in wax paper.  Chill overnight, or until firm enough to slice.  Cut in 1/8-inch slices; bake on ungreased baking sheets in hot oven (425°F.) 5 minutes, or until done.  Makes about 8 dozen cookies.

Butterscotch Sliced Cookies.  Use recipe for Vanilla Nut Sliced Cookies, substituting brown sugar for granulated sugar.  Use a total of 1-1/4 cups firmly packed brown sugar.
