Oreo cheesecake Recipe

OREO CHEESECAKE

1 (20-ounce) package OREO Chocolate Sandwich Cookies
1/3 cup BLUE BONNET 75% Vegetable Oil Spread, melted
3 (8-ounce) packages cream cheese, softened
3/4 cup sugar
4 eggs, at room temperature
1 cup dairy sour cream
1 teaspoon vanilla extract
Whipped cream, for garnish

Preheat oven to 350°F.  Finely roll 30 cookies; coarsely chop 20 cookies.  In bowl, combine finely rolled cookie crumbs and spread.  Press on bottom and 2 inches up side of 9-inch springform pan; set aside.

In bowl, with electric mixer at medium speed, beat cream cheese and sugar until creamy.  Blend in eggs, sour cream and vanilla; fold in chopped cookies.  Spread mixture into prepared crust.  Bake at 350°F for 60 minutes or until set.

Cool on wire rack at room temperature.  Chill at least 4 hours.  Halve remaining cookies; remove side of pan.  To serve, garnish with whipped cream and cookie halves.

Makes 12 servings.
