CREAMY RICE PUDDING RECIPE

This recipe came from The New McCall's Cookbook, 1973.

CREAMY RICE PUDDING

1/2 cup raw regular rice
1/2 teaspoon salt
1 quart milk
1/2 cup sugar
1/4 teaspoon vanilla extract
2 (1-inch) cinnamon sticks

1.  In medium saucepan, bring 3/4 cup water to boiling.  Add rice and salt; cook over low heat, covered and stirring occasionally, 10 minutes, or until water is absorbed.

2.  Preheat oven to 325 degrees F.

3.  Turn rice into lightly buttered 8-1/2-by-1-1/2-inch round baking dish.  Stir in milk, sugar, and vanilla.  Insert cinnamon sticks in rice.

4.  Place in shallow pan.  Pour hot water to 1/2-inch depth around baking dish.

5.  Bake 2-1/2 hours.  Stir rice mixture gently several times during the first 2 hours.

Makes 6 servings.
