BOOK REVIEW

PEPPERIDGE FARM EASY ENTERTAINING: RECIPES FOR FAMILY AND FRIENDS

by Pepperidge Farm

(Meredith Books - 1995)

Pepperidge Farm Easy Entertaining CookbookThis out-of-print hardcover book is actually a revised and enlarged version of a softcover book with the same title that was published by The Campbell Soup Company.  The hardcover format makes for a sturdier, longer-lasting copy in your cookbook library.

The recipes are designed for serving as family meals or for entertaining your friends.  Whatever the occasion, the drudgery of making stuffing, puff pastry, and broths from scratch is removed when you use Pepperidge Farm and Campbell's convenience foods.

The recipes in the cookbook use many of the products that fall under the Pepperidge Farm brand name: Pepperidge Farm Crackers, Pepperidge Farm Croutons, Pepperidge Farm Frozen Puff Pastry Sheets and Shells, Pepperidge Farm Gravies and Pepperidge Farm Stuffing.  Because the brand is owned by The Campbell Soup Company, several of the Campbell products are featured as recipe ingredients as well:  Campbell's Soups, Swanson Broths and Vlasic and Early California Olives.

If you've ever tried to make puff pastry from scratch then you know how difficult and time consuming the process is.  Those of us who are not die-hard bakers are quite happy that Pepperidge Farm provides a decent substitute with their frozen puff pastry sheets and shells.

There are 21 recipes that use Pepperidge Farm Frozen Puff Pastry Sheets.  Some of the recipes are Apple Strudel, Chocolate Mousse Napoleons, Parmesan Crisps, Southern Pecan Crisps and Spinach-Cheese Swirls.

There are 12 recipes that use Pepperidge Farm Frozen Puff Pastry Shells.  Some of the recipes are Chicken Pot Pie, Coffee Praline Puffs, Easy Lemon Chicken and Seafood au Gratin.  I was once served a fabulous dish for Christmas morning breakfast: Shrimp Maximillion.  You could take the Easy Eggs Benedict recipe found here and add a small can of shrimp to the Hollandaise Sauce for an easy, but impressive breakfast or brunch dish.

There are 15 recipes which use the jars of Pepperidge Farm Gravies, 5 that use Campbell's soups as an ingredient and 12 that use Pepperidge Farm Stuffing.

The cookbook is illustrated with color photographs of the finished dishes, and when necessary, small drawings that demonstrate how to arrange and cut the puff pastry sheets.

All in all, this handy cookbook contains 60 delicious recipes from appetizers to desserts with dozens of easy pastry pointers.
